Castanea brings together products from around the world with the bounty of the local region. The restaurant embodies sustainability as a lifestyle and offers a culinary experience with healthy, natural dishes. Both guests and producers are meant to feel the spirit of this sustainable way of life.
The team places great importance on keeping the supply chain simple and staying as close to the producers as possible with fresh market products. This gives both Castanea and its guests the confidence of knowing where the ingredients come from and how they were made. A direct supply chain is climate-friendly, and Castanea is committed to continuously improving it in order to offer the most environmentally conscious products possible.
Guests are invited to feel at home. Warm hospitality is the highest priority. Castanea aims to create a perfect experience and wishes every guest an unforgettable visit.
Andrew Affolter, the person behind Castanea, is the man of the moment.
As the owner, he is the creative force in the kitchen, preparing beautiful dishes with heart and artistry. Each course is served and personally introduced by him. Born in the USA, Andrew moved to Switzerland as a teenager. After training as a chef, he spent several years honing his craft in various Michelin-starred kitchens. In August 2021, Andrew fulfilled his dream of opening his own restaurant. Castanea is a true family business, where heartfelt hospitality is deeply valued.
To maintain the high standards of quality, most of the ingredients are sourced from nearby regions. Select products come from abroad when they are unavailable locally or do not meet the desired quality. Wines and beverages are supplied by Zweifel Zürich, while the beer comes from Sudwerk Brewery.
Organic & Sustainable
Only products from certified organic farming are served. The kitchen uses whole plants and consciously avoids any food waste. Wherever possible, Castanea supports local producers—for example, the meat is sourced directly from Pfäffikon.
Menu
There is no fixed menu at Castanea. Instead, Andrew creates with what nature provides in the moment. There are no limits—it’s not uncommon to find something like pea ice cream as the final course. Guests can choose between a 7- or 9-course menu, optionally paired with matching wines or, more recently, juice pairings to round out the experience.
